We're back in Texas and sampling the Tex-Mex. Since I'm big on surveys, what are your thoughts?
Corn tortilla or flour?
Green chile sauce or red?
Crispy taco or soft?
What's your favorite? enchilada, taco, chilupa, tamale, burrito?

Red Yes. As for what dishes I like the best, chile colorado and machaca top my list. Enchiladas come in a close third. And a "chilupa" can't be real Mexican food, since it comes from Taco Bell. Re: Tex-Mex Survey

No true Mexican would vote for anything but CORN! Tortilla, tamale, etc - and theres nothing worse than a gringo tortilla - cardboard! Gag!

I was about to say fajitas, that's what I usually order. Chicken.

Yes, guacamole is a necessity! Beware; the quality varies widely from place to place.

Okay,I can't resist. Since I am a Texan from womb to tomb I obviously love Tex-Mex. Papasito's is good, but you have to go find a taco stand in the Mexican part of town for the best food.
Corn tortillas are the only way to go. Color of the sauce doesn't matter. It's all about taste. I prefer pico de gallo. Soft tacos have better flavor. Salsa only. The best places serve their salsa warm. Queso can be very iffy. Fajitas mixed with steak and chicken. Must have grilled onions and bell peppers. Every order of Tex-Mex must have lime wedges and pico de gallo on the side along with rice and beans. (refried pintos only) Re: Re: Tex-Mex Survey

Do you remember a time when Acappella and AVB had a concert in Texas (maybe East?) when we broke into an impromptu worship segment of congregational singing? Try something really mixed up, Crawfish tacos....They are popular in Houston with a mix of tex-mex and cajun food.
